Back to school means back to the morning routine: wake the kids, get them ready for school and have breakfast on the table. Treat your little ones (or, OK, yourself) to this yummy, healthy start to the day. Save precious morning minutes by making the batter the night before!
Apple Cinnamon Pancakes
(Serves 6)
Ingredients
2 cups all-purpose flour
1 tbsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 tsp. Nectresse sweetener (6 packets)
2 large eggs
1 tsp. vanilla extract
1 1/2 cups low-fat milk
1/4 cup melted butter (light butter or margarine may be used instead)
1 cup chopped apple
Directions
Blend dry ingredients in a large mixing bowl; set aside. Whisk together eggs, vanilla, milk and melted butter. Add to dry ingredients and gently mix. Fold apples into batter.
Spray a large skillet with non-stick cooking spray and heat over medium heat. Pour 1/3 cup of batter per pancake onto hot skillet. Cook until bubbles appear, then flip and cook until golden brown.
Serve hot and enjoy!
